There is software called MediaInfo (https://en.wikipedia.org/wiki/MediaInfo) that will tell you a lot about your media files. It will tell you what (if any) audio tracks are in your MKV file and what format they're in.

That error and lots of others like it indicate that the drive was having trouble reading the disc. Eventually the OS gets tired of waiting on the drive and assumes something bad happened and displays an error. Most likely, this is because the disc is dirty (even if the surface looks clean). I almost always create a decrypted backup. The few times I have created a non-decrypted backup it is usually an accident. When it happens, though, I do end up with a discatt.dat file. The Data Hoarder crowd over on Reddit (https://www.reddit.com/r/DataHoarder/) likes to shuck drives out of external storage. These days <$200 for a 14TB drive seems to be what people go for. You probably won't get a 7200 RPM enterprise grade drive, but that might not matter.

The audio and the video are interleaved, which sorta makes sense, since when you watch it on a regular player, you hear the audio at the same time as you see the video. When I open a MakeMKV backup, I select the enclosing BDMV folder, not anything inside it.
